Campaign 2025

The Japanese Curry Campaign was held from December 1st through 31st at nine participating restaurants in LA. During this period, each participating restaurant created an original menu item for customers to enjoy.

Workshop
in LA

On November 5, 2025, we hosted a Japanese Curry Special Workshop at JAPAN HOUSE Los Angeles.
The event showcased the appeal of Japanese curry through seminars and tastings, offering restaurant owners and chefs inspiration for December campaign menus, giving distributors a chance to recognize the product’s potential, and providing press and influencers with fresh discoveries to help amplify its reach.
During the seminar, we also highlighted the versatility of Japanese curry, introducing a variety of dishes such as Katsu Curry, Curry Udon, Japanese Curry Pan, Curry Pizza, Curry Ramen, and Curry Rice Balls.

Roux or Flakes

Japanese-style curry
is prepared using two main methods:
one with solid roux and the other with flake or powder roux.

Roux

The core appeal of solid curry roux is its ease of use and consistent deliciousness. This oil-and-flour-based mix creates the essential Japanese-style curry characteristics: "thick texture" (toromi) and "richness" (koku).

It ensures a stable flavor that anyone can easily reproduce without the need for complicated measurements or knowledge of spices. By simmering, the roux integrates with the ingredients' umami, developing a deep flavor that tastes slow-cooked.

Flake roux's appeal lies in its lower oil content and how quickly it dissolves, dramatically increasing cooking freedom. It's useful for making small portions or as a "secret ingredient," breaking away from the fixed-portion constraint of solid roux.

This flexibility allows it to be used not only for curry rice but also as a base or seasoning for diverse dishes like stir-fry. Furthermore, its low-calorie, low-fat nature directly addresses modern health trends. Flake roux has evolved from a "main curry ingredient" to a "versatile seasoning" for many dishes.

The All Japan Curry Manufacturers Association was founded in 1961.
Today, it consists of 22 member companies engaged in the production and sale of curry roux, curry powder, retort ("boil-in-bag") curry, and spices, many of which also export their products overseas.

Through the production and distribution of curry products, the association is committed to contributing to a richer, safer, and healthier consumer lifestyle. To support the development of food culture worldwide, the association conducts promotional activities for curry, researches market trends and product quality, and collects and disseminates information related to curry.
